First aged, then matured at low temperatures

Utilizing traditional Japanese cold preservation methods—such as cold-drying, storage, and fermentation—we age Omi beef at low temperatures in an ice-temperature refrigerator.

Focus on Flavor: Aged Omi Beef Served.

Through the aging process, the meat becomes juicier, more tender, and richer in flavor and umami. Since marbling varies between cuts of Omi beef, Matsukiya relies on years of expertise to determine the ideal aging period, ensuring each piece is served at its peak.

    Renowned for popularizing Omi Beef nationwide

    In the early Meiji era, when travel was difficult, local pioneer Shozo Nishii established a beef production system in Ryuo and boldly transported Omi Beef to Tokyo and Yokohama—helping it earn national recognition as a premium Wagyu.

    Sukiyaki is Matsukiya in Ginza

    "Matsukiya," a pioneering Omi beef sukiyaki restaurant, opened in Tokyo in 1883. It was famously said, "Sukiyaki is Matsukiya in Ginza." The exclusive supplier, Shozo Nishii, later led the third-generation owner, Yoshio Nishii, to inherit the name and establish the Ishiyama main store on the Setagawa River. Today, the fourth-generation, Motoharu Nishii, continues the operation.
